This dish is a magnificent blend of coconut milk and fragrant spices that elevates the already exquisite taste of the Ilish (hilsa) fish. It’s surprisingly easy to make and doesn’t require an extensive list of ingredients.
The Recipe: Ilisher Trumphedo
Ingredients (Ilisher Trumphedo):
- 2 tablespoons ghee
- Whole garam masala (1 cardamom, 5-6 cloves, 2 cinnamon sticks, 1 mace)
- 1 cup finely chopped onions
- 2 tablespoons onion paste
- 1 teaspoon ginger paste
- ½ teaspoon dried red chilli paste (or to taste)
- Salt to taste
- 1 cup coconut milk
- 2-3 green chillies
- 1 tablespoon lemon juice
- Pieces of Ilish fish (marinated with salt)
Instructions:
Heat the Ghee: In a pan, heat the ghee. Once it’s hot, add the whole garam masala and sauté for a few moments until their aroma is released.
Sauté the Onions: Add the finely chopped onions and sauté until they turn golden brown.
Fry the Pastes: Now, add the onion paste, ginger paste, and dried red chilli paste. Fry them well until the spices release their oil.
Add Coconut Milk: Mix in salt and the coconut milk.
Simmer the Fish: Once the gravy comes to a boil, gently place the salted pieces of Ilish fish and the green chillies into the pan. Cover the pan with a lid and cook on low heat for 5 minutes.
Finish and Serve: After 5 minutes, remove the lid, add the lemon juice, and turn off the gas.
